In the glass

The wine had opened up. It was a slightly cloudy lemon in colour, and it was clear that it had not been filtered. There were some red flowers and wild flowers, and a strong lime. The acidity was very high, yet the wine was soft.

Producer

Domaine Henri Naudin-Ferrand is a family domaine in Magny-lès-Villers, run since 1994 by Claire Naudin, the daughter of Henri Naudin. The domaine covers about 22 hectares of vines, 80% of them in regional appellations such as the Hautes Côtes. Henri Naudin took part in the 1961 application that won the Hautes-Côtes AOC.

Site

The wine comes from Les Tilles, an east-facing parcel in Magny-lès-Villers, in the Hautes-Côtes de Nuits in Bourgogne, France. The domaine chose its best Chardonnay parcel for this cuvée, to make it by a different kind of vinification without added sulfites.

Vinification

The grapes are picked by hand and pressed as whole bunches, slowly and at low pressure. The juice settles by gravity without enzymes (débourbage), then alcoholic and malolactic fermentation happen naturally in barrels, followed by 12 months on the lees. The wine is bottled without filtration, with a very small amount of sulfites added only at bottling.
