The fruit was deep apple, ripe apple. It was a good Champagne, on the rich and heavy side.

Producer

G.H. Mumm is a Champagne house founded in Reims in 1827 by the Mumm brothers. Its motto, "Only the best", was penned by Georges Hermann Mumm, and in the 20th century René Lalou was the key driving force behind the company's development for nearly fifty years. RSRV is a collection of 100% Grand Cru wines that the cellar master has kept aside for a circle of insiders since 1838, and Lalou is the vintage cuvée within it that carries the philosophy of René Lalou.

Site

The house's own vineyards cover nearly 218 hectares, of which 160 hectares are classified as Grands Crus. This wine brings together Pinot Noir from the Montagne de Reims and Chardonnay from the Côte des Blancs, in equal parts.

Vinification

Across the house, the grapes are picked by hand over about three weeks, plot by plot and bunch by bunch. They are pressed close to the vineyards so the fruit is not damaged, and the juice is then left to settle (Débourbage) at 10 to 15°C for about 16 to 18 hours.
