In the glass

The acidity was high, and there was sweetness alongside it. I was curious how it would change with more time.

Producer

Domaine Cauhapé is based in the Castet quarter of Monein. The first vines on this land were planted in 1558. The name Cauhapé comes from Caussapé, an old place name meaning a place that warms the feet in the Béarn language.

Site

The domaine's vineyards cover 54 hectares on hillsides in the commune of Monein, in the heart of Jurançon, facing south-east at altitudes of up to 400 metres. For this wine the soil is clay and silica, with a south-east exposure.

Vinification

Quatre Temps is a reworked successor to the domaine's earlier dry cuvée, Sève d'Automne. The blend is Petit Manseng 50% and Gros Manseng 50%. Petit Manseng has Savagnin as one parent, and the other parent is not known. The grapes are picked by hand into small crates, destemmed and given 12 hours of skin maceration, then pneumatically pressed with selection of the juice and fermented in oak barrels that have already been used 3 to 4 times.
